Recipe Rambles

Our family has been having fun coming up with new recipes that have sun dried tomatoes in it. We have found sun dried tomatoes to be quite tasty! This recipe is very colorful and full of flavor. Enjoy!
 

Three Grain Salad

Serves 8-12

·         1 cup wheat berries*

·         1 cup rice

·         2 cups water

Place rice and wheat berries together in a 4-quart saucepan with the water. Bring to a boil, then cover and simmer on low for 30 minutes.

·         1 cup quinoa

·         1 cup water

Combine quinoa and water in a 2-quart saucepan, bring to a boil, then cover and simmer on low for 15 minutes. Set aside.

·         1 red onion, chopped

·         1 red pepper, chopped

·         1 clove garlic, thinly sliced

·         1 T coconut oil

Put onion, pepper, garlic, and coconut oil together in a frying pan. Sauté on medium to high heat for about five minutes or until the chopped onion pieces are translucent. Set aside.

·         1 cup Bella Sun Luci  sun dried tomatoes in 100% olive oil

·         1 ½ cups chopped artichoke hearts

·         ¼ cup parsley

Chop up the dried tomatoes, artichoke hearts, and parsley all separately by using a pair of scissors.

·         ½ cup ground chia seed

Place about ½ cup of whole chia seeds into a blender or VitaMix. Blend until peppery and slightly rough (approx. one minute on high).

·         3 T coarsely ground black pepper

·         2 T powdered garlic

·         3 T of apple cider vinegar

Combine all prepared mixtures together in a large bowl. Add black pepper, garlic, and apple cider vinegar.

 Enjoy your meal!

*Soak grains overnight for softer grain
