Three Grain Salad
Serves 8-12

1 cup wheat berries*
·
1 cup rice
·
2 cups water
Place rice and
wheat berries together in a 4-quart saucepan with the water. Bring to a boil,
then cover and simmer on low for 30 minutes.
·
1 cup quinoa
·
1 cup water
Combine quinoa
and water in a 2-quart saucepan, bring to a boil, then cover and simmer on low
for 15 minutes. Set aside.
·
1 red onion, chopped
·
1 red pepper, chopped
·
1 clove garlic, thinly sliced
·
1 T coconut oil
Put onion,
pepper, garlic, and coconut oil together in a frying pan. Sauté on medium to
high heat for about five minutes or until the chopped onion pieces are
translucent. Set aside.

1 cup Bella Sun Luci sun dried tomatoes in 100% olive oil
·
1 ½ cups chopped artichoke hearts
·
¼ cup parsley
Chop up the
dried tomatoes, artichoke hearts, and parsley all separately by using a pair of
scissors.
·
½ cup ground chia seed
Place about ½
cup of whole chia seeds into a blender or VitaMix. Blend until peppery and
slightly rough (approx. one minute on high).
·
3 T coarsely ground black pepper
·
2 T powdered garlic
·
3 T of apple cider vinegar
Combine all
prepared mixtures together in a large bowl. Add black pepper, garlic, and apple
cider vinegar.
Enjoy your meal!
*Soak grains
overnight for softer grain
