The Forth of July

I guess I can start this post saying that our grandmother wasn't doing well she had a stroke.  So, on the morning of the forth of July we went to visit her.  We also were able to see some of our Aunts and Uncles.
 
On our way back from the visit we witnessed a motorcycle accident. The boy pulled to hard on the accelerator when the light turned green, which caused his front wheel to lift of the  ground. Then his body weight pulled the accelerator even more. The motorcycle most likely landed on his foot, but bounced off.  



 
After the accident we took the back roads home and then went off to see fireworks about five hours later. 
 



 
The next morning, we were called about Grandma.  In a following post we will tell you what happened.

Fellowship Sunday with the Staddons

We were blessed that the Staddons came to our Fellowship Sunday.  Fellowship Sunday is where we invite people to join us once a month for lunch, worship, prayer, and fellowship.  This particular Sunday on June 30th, 2013 we invited the Staddons to come and since they are four hours away to stay at our house Saturday night.

That night we ate dinner, had ice cream with a delicious berry cobbler , and played music.   The next morning we went on a short hike.  Here are some pictures.

ATI Conference!

We had a wonderful time at the ATI conference in May.  We were just a little late on posting.  All of the children enjoyed the participating in the different events.  Patience thoroughly enjoyed teaching COMMIT.  Grace was in COMMIT.  It was her last year and there were amazing sessions.  TaliJoy enjoyed being with fellow believers and also enjoyed listening to the sessions.  Tabor and Luka had the vigorous training in ALERT.  The came back singing their marching song and having verses on the tip of their tongue. Nate had a fun time in CI.  He was able to be on the same team as Laura and Alison Bongioanni.  The Bongioanni's have been traveling with us to ATI for two to three years.  The whole time Nate has been in CI the Alison and Laura have been able to be on the same team.

Recipe Rambles

Our family has been having fun coming up with new recipes that have sun dried tomatoes in it. We have found sun dried tomatoes to be quite tasty! This recipe is very colorful and full of flavor. Enjoy!
 

Three Grain Salad

Serves 8-12

·         1 cup wheat berries*

·         1 cup rice

·         2 cups water

Place rice and wheat berries together in a 4-quart saucepan with the water. Bring to a boil, then cover and simmer on low for 30 minutes.

·         1 cup quinoa

·         1 cup water

Combine quinoa and water in a 2-quart saucepan, bring to a boil, then cover and simmer on low for 15 minutes. Set aside.

·         1 red onion, chopped

·         1 red pepper, chopped

·         1 clove garlic, thinly sliced

·         1 T coconut oil

Put onion, pepper, garlic, and coconut oil together in a frying pan. Sauté on medium to high heat for about five minutes or until the chopped onion pieces are translucent. Set aside.

·         1 cup Bella Sun Luci  sun dried tomatoes in 100% olive oil

·         1 ½ cups chopped artichoke hearts

·         ¼ cup parsley

Chop up the dried tomatoes, artichoke hearts, and parsley all separately by using a pair of scissors.

·         ½ cup ground chia seed

Place about ½ cup of whole chia seeds into a blender or VitaMix. Blend until peppery and slightly rough (approx. one minute on high).

·         3 T coarsely ground black pepper

·         2 T powdered garlic

·         3 T of apple cider vinegar

Combine all prepared mixtures together in a large bowl. Add black pepper, garlic, and apple cider vinegar.

 Enjoy your meal!

*Soak grains overnight for softer grain

God is Good

 
A while ago since we have forgotten to publish, Daddy was driving home from work and nearly had a head-on collision with a sleepy driver - it was really close!!
The car was really close to Dad - see the dilapidated rear-veiw mirror, ouchy ouchy!!


 "Gracious is the LORD, and righteous; our God is merciful."

Psalm 116:5




The car had to have been very close to only "decorate" the tire and do minor paint damage to the body of the car.
Wow!!! that was a lot of force going against our car.

There was only a slight bit of the body damage. Praise the Lord!




We are praising God for giving us a wonderful father who is still alive after to close an accident.  


We know that God sent angels around our car. God saved Daddy, car, and all.
